I have created a new tab with numerous fields. Each time I add a new field, they are displayed in alphabetical order. How do I keep the fields from auto sorting and also how can I tell each field which order I want.

That capability is not within the current design. I have it slated for the next major release but for now they will be sorted alphabetically. You can always put a number in from of the label to force the order as you want. Not the most elegant solution but it will work.
