Vendor -> Purchase/Receive Inventory -> choose a vendor and then click properties - there is no Save button so you can't update vendor's info.
Same for Customers -> Sales/Invoices

You could bypass this with a custom template.

This is by design, the main reason is any changes made will not be reflected on the current order screen. There would need to be a refresh of the vendor/customer information. This was meant to be just for reference only.
