Our company makes furniture and we need to always display the items dimensions (L x W x H), age, region and materials. I have added these six fields in already using the custom fields function in the inventory module. However I now need to allow them to be displayed/edited when we enter a sales quote or an invoice as well as when we print. Yet I don't see anywhere that allows you to determine which custom fields show up in the invoice line items. Is there a way to do this?

The link you are refering to is for printed (and emailed) forms, yours is for data entry forms on the order screen. To fix this,m you will need to modify the trunk, specifically /modules/inventory/ajax/inv_details.php. This is where the items are retrieved from the database and sent to the form. You will need to know php and can append the information you need to the description when the item is retrieved and it will be entered into the form. You will be able to edit it from there.
