This is how my company works:
I have 1 actual bank account, which I pay suppliers with, and receive money. I have 2 x 3rd party company which handle credit cards and other platforms. When a customer pays these 3rd places hold the money, and then I request a payout into my bank account. They also deduct a fee for themselves.
How would I set up something like this?

You can add to your chart of accounts cash type account for the customer's payment received by the 3rd party or use existing propriate account if your chart of accounts have one and deposit on it whole payment from the customer. You can do it as standard bank operation in Phreedom. When you get money from the 3rd party, you have to do it as general ledger operation. On the debit side put payment from the customer and on the credit side put received money to your bank account and the difference as financial expense. The rest should be the commision fee charged by the 3rd party. This is only general advice, before doing it consult it with your accountant.
